Mori-Nu Authentic Japanese-style Tofu uses Nigari (magnesium chloride) to firm organic soymilk into silken tofu. Although modern tofu is made using a variety of firming agents, traditionally Japanese tofu was made with Nigari, a naturally occurring
component of seawater. Our tofu made with Nigari captures the subtly sweet, delicate flavor of sea minerals and the authenticity of original Japanese-style tofu.
